“Pogi” (포기) refers to a “head” or “bunch.” Unlike mat-kimchi (which is pre-cut into bite-sized pieces), Pogi Kimchi consists of whole Napa cabbage halves or quarters that have been salted and hand-rubbed with seasoning.
